Once again I was given many chickpeas last Friday at work. I made some spicy chickpeas with half by baking them in the oven with olive oil, salt and pepper. They were a great crispy snack I devoured already. Yesterday with the other half I made some blonde brownies. They were super easy only having five ingredients and made enough for me for a couple days.
The sweetener is male syrup. The combination of chickpeas and almond butter give the inside a gooey texture. The batter can also be eaten as is [guilty].
Five Ingredient Speedy Vegan Brownies
1 can (15oz) chickpeas drained and rinsed
1/3 c maple syrup
1/2 c almond butter
1/3 c chocolate chips
Walnuts for topping the bars
Preheat the oven to 350 degrees and spray baking dish of choice.
Place the first three ingredients in o food processor and blend until smooth. Stir in chocolate chips and either pour in a 8×8 sprayed baking pan or sprayed regular size muffin tin. Top with crushed nuts of choice for topping (or more chocolate chips). Bake for 20-25 minutes enough so that the inside is still gooey but the brownies do not fall apart.
