The World’s Easiest Falafel

I’m going to keep this post short and sweet, just like the recipe. I have been in love with the falafel for as long as I knew it was another variation of the chickpea. A chickpea mashed, combined with spices and fried…who wouldn’t like some of that?

This version of a falafel is for people like me. The cheating vegans. Those who like to cook sometimes, but sometimes just need a tasty way to use up ingredients in a fast manner. This recipe was inspired by JL Goes Vegan’s attempt to use up her vegan pantry. Two ingredients. All yum!

The World’s Easiest Falafel

1 cup your favorite hummus

1 cup bread crumbs (or grain of choice, wheat/oat bran would work too)

Combine the ingredients in a small bowl. The texture will be crumbly.

Heat a non-stick pan over medium heat. Form mixture into falafel shaped patties. Brush the skillet with a bit of oil or cooking spray. Grill patties (about 5-8 mins per side) until desired crisp texture is achieved.

Serve in a pita or gobble them alone. I usually make a dip with dill, garlic salt and coconut plain yogurt or dip them in soy sauce.
